Rustic Oven Potatoes

There must be something addictive and comforting about potatoes… Even though I try to limit my carbs intake during the week, as much as possible I reserve either Saturdays or Sundays to this very special treat.

5 large potatoes

3 tbs olive oil

1 tbs coarse salt

1/2 tbs freshly ground pepper

Heat the oven to 350°C. Put a medium-sized pot filled with water on the stove and heat until it starts boiling. Meanwhile, peel the potatoes, rinse them and cut them in half length-wise. Cut each half in quarters, yielding long wedges. Put potato wedges into boiling water and let simmer for 5 minutes. Carefully drain wedges and spread them on a clean kitchen cloth, patting them dry. Transfer them in a large bowl, add olive oil, salt, pepper, and stir gently to coat all wedges. Lay wedges in a single layer on a baking sheet lined with parchment paper. Bake until golden brown, flipping wedges
