French Flan

Any time I go to Paris, I always make sure to stop in one of those typical french patisseries, such as PAUL, and get a slice of delicious flan. It’s the ultimate comfort food for travelers to Paris!

1 roll of pate brisée

3 large eggs

150 gr sugar

70 gr cornstarch

1 tsp vanilla extract

15 cl liquid cream

60 cl whole milk

Preheat the oven to 210°C. In the bowl of an electric mixer fitted with the whisk attachment, whisk the eggs and half of the sugar until very light and fluffy. Fold in lightly the cornstarch, the vanilla extract and the liquid cream. In a large saucepan over medium heat, wisk together the milk and the rest of the sugar, bringing it to a boil. Remove from heat and stir in slowly eggs mixture. Put mixture back over medium heat and stir constantly. When the custard starts to get thick, remove from heat and pour in a medium bowl. Cover with plastic wrap and let cool for 15 minutes. Roll out the pate brisée over a medium cake pan and refrigerate for 15 minutes. Pour the custard in the pan, shake slightly to level it off and cook i for 20 minutes. Increase the temperature to 240C and cook for 20 more minutes.
